Leaf is undergoing some changes for the winter
To make your favourite area available during winter times, we are adding a nice roof on top and enclosing the space with windows and a new door at the steps. As soon as the building of the deck is complete our guests can enjoy the outside area no matter what time of the year. If it is too windy, close the windows, raining will be no problem as the four umbrellas are moved to the front of the building for those who like too sit under the umbrellas.
A month or two later we will add a big rotating sushi bar so that you can enjoy a quick lunch. Want to order buffet but not order from the menu, then the rotating sushi bar will also be for you.

Sashimi
Sashimi often is the first course in a formal Japanese meal, but it can also be the main course, presented with rice and soup in served separately. Many Japanese people believe that sashimi, traditionally considered the finest dish in Japanese cuisine, should be eaten before other strong flavours affect the sense of taste. Culinary, sashimi represents the Japanese cultural appreciation of subtlety. The finer sensation can vary from salmon to squid and everything in between. The sliced seafood that composes the main ingredient is typically draped over a garnish.. Wasabi paste is sometimes mixed directly into soy sauce as a dipping sauce. Purists denounce the practice of mixing wasabi into soy sauce, saying that this dilutes the sharp hot flavour of wasabi. Another more correct way to flavour soy sauce with wasabi is to place the wasabi mound into the soy sauce dish and then pour it in. This allows the wasabi to infuse the soy sauce more subtly. A reputed motivation for serving wasabi with sashimi (and pickled ginger), besides its flavour, is killing harmful bacteria that could be present in raw seafood.
Some sashimi ingredients, such as octopus, are sometimes served cooked given its chewy nature. Most seafood, such as salmon, tuna and squid are served raw. You can also have your sashimi lightly seared outside, leaving it raw inside.

The art of sushi making
Did you know that in order to become a qualified sushi chef takes about 7 years of training. The reason for this is that you must be able to produce the sushi as a machine. Your sushi must look the same every time. In the first year, the apprentice will mostly see how the master makes the sushi. having to help with only the easy rolls, like California Rolls. It takes them nearly a month if they are fast learners, up to 6 months if they are slow learners. After that the must learn to perfectly cut every piece of sushi. After a year, they will start to make the more stylish sushi, temaki rolls, Salmon Roses, dragon rolls etc. For the next 5 and a half years they are seen as junior chef's and try to get their sushi to the standard where only a machine can get it the same every time.After their 6th year of training, they are sushi chef's, but only becomes a senior chef once they have been making sushi for at least 13 years. While the western civilization likes to learn quick, and skip most of these steps, your best sushi chef's are mostly likely the ones that went through the whole course.

About Sushi
According to all sushi is a Japanese dish, while the Japanese started to trade sushi, they were not the ones whom created the dish. Long ago the Chinese fisherman had no fridges to store their food, there were not a lot of options for them to. Because the boats were made out of wood, they had to come up with means to eat, but not make fire on their wooden vessels. As such, when they went to land, the would make barrels of rice, treat it with vinegar so that the rice would stay soft for longer. They would then embark on their fishing journeys, taking some of the fish in their hauls, cut them up, and mix the fish with the rice in order to fill their bellies. This is how sushi started. In later years the Japanese would take some more colorful seafood, letting the sushi look nice and transformed the Chinese meal into the beautiful artful food that is present all around the world
